This legendary pasta—hand-rolled with a mattarello and folded one by one by the master sfogline—is served in the most traditional way, in a rich capon broth.
The tortellino embodies centuries of tradition: a delicate square of fresh egg pasta filled with pork loin, prosciutto, mortadella, Parmigiano Reggiano, nutmeg, and pepper, carefully twisted into its iconic shape. At the festival, you’ll taste this little masterpiece alongside other food and wine specialties of Modena’s countryside.
