Itinerary
It is a guided tour among the oldest olive trees in the Monopoli countryside, to discover where the oil is born. The first stop is a cave complex, inside which a hypogeum oil mill was created, active from the Middle Ages until 1900. There is also a visit to an 11th century rock church with frescoes and a thousand-year-old olive grove.
The second stop is a farm located in a fortified farm of the sixteenth century, Here is a modern oil mill where, in the winter months, extra virgin olive oil is produced.
The visit is completed with sensory analysis of 5 extra-virgin oils of different cultivars (Cima di Mola, Coratina, Picholine, Peranzana, Fabulous) produced in Monopoli.
