Itinerary
Begin your experience with a walk through the Lambrusco and Trebbiano vineyards in the scenic countryside of Modena (weather permitting). Surrounded by rows of red and white grapevines, you’ll step into the world where one of Italy’s most iconic products is born: Balsamic Vinegar of Modena.
Inside the historic, family-run acetaia, discover the centuries-old art of balsamic vinegar production. Learn about its origins and the process that transforms cooked grape must into the famous “Black Gold” through long aging in wooden barrels. Visit the atmospheric barrel rooms and follow every step of this transformation.
The experience concludes with a guided tasting of different balsamic vinegars at various aging stages. Taste each vinegar first on its own, then paired with carefully selected aged Parmigiano Reggiano and artisanal ice cream, chosen to enhance the aromas, balance, and intensity of each product.
